- 1 cup canola oil
- 3 cups sugar
- 2 eggs
- 1 cup chopped nuts (optional)
- 5 cups all-purpose flour
- 1 large can pumpkin
- 2 tsp. baking powder
- 2 tsp. soda
- 1 tsp. salt
- 2 tsp. vanilla
- 2 tsp. Engage Organics Sweet Cinn
- 1 pkg. chocolate chips

Mix oil, sugar, eggs, pumpkin, vanilla, and Sweet Cinn together.
Sift together flour, baking powder, soda, and salt. Add to above mixture.
Add nuts and chocolate chips if desired. I substitute raisins for the chocolate chips. They both complement the pumpkin nicely.
Drop by rounded teaspoons on to a greased cookie sheet
Bake at 350 degrees for about 10 minutes
Makes 6 dozen.
