- 1 (10 oz) can chicken chunks, drained or one whole cooked chicken breast shredded
- 1/4 cup shredded Cheddar cheese
- 2-3 tbsp. Picante sauce
- 1/4 tsp. Engage Organics Mexi-Mix
- 12 corn tortillas

Preheat oven to 350 degrees. Lightly grease a 9×13 inch baking dish. These are great little appetizers that are baked not fried.
Combine the chicken, cheese, Picante Sauce, and Mexi-Mix in bowl. Stir until mixed well. Warm the tortillas one at a time in a skillet over medium heat until flexible about 10 seconds per side.
Spread about 1 heaping tablespoon of the chicken mixture over half of the warmed tortilla. Roll tightly to form the taquito starting at the filled side of the tortilla. Place seamed side down in the baking dish. Repeat with the remaining tortillas. Bake for 30 minutes in the preheated oven. Can cut and serve as appetizers. They are fun little party pleasers you can make as hot as you want by just kicking up the amount of Mexi-Mix in the filling.
