- 4 cups fresh diced apples (tart green Pippin or Granny Smith applies, peeled)
- 2 cups sugar
- 3 cups flour
- 2 tsp. baking soda
- 2 tsp. Engage Organics Sweet Cinn
- 3 eggs
- 1 tsp. salt
- 1 tsp. pure vanilla extract
- 1 cup chopped walnuts (optional)
- 1 cup canola oil

Grease and flour Bundt pan.
Mix together diced apples with sugar and let stand one hour.
Sift flour, soda, and spices.
Beat eggs, add salt, oil, and vanilla
Add apple mixture with the egg mixture.
Combine flour mixture with apple mixture.
Stir in walnuts.
Bake in 350 degree oven for approximately 45-50 minutes, until toothpick comes out clean
Cook in pan and turn upside down to cool for easy removal.
Dust with powdered sugar or leave plain. Either way it is absolutely delicious and addicting in the fall when apples are at their crisp best.
