- 3 pounds sweet potatoes (3-4 potatoes)
- (1/2- 3/4 cup extra virgin olive oil to coat cooked sweet potatoes, then sprinkle 1-2 Tbsp. Go-Grill-A-Rub into the olive oil and potato mixture)
- 4 Tbsps.. extra virgin olive oil
- 2 tsp. balsamic vinegar
- 1 green onion chopped
- 1-2 tsps. Engage Organics Original All-Purpose Blend
- 1/2 tsp. Engage Organics Garlicsaltless
- 1/4 tsp. Engage Organics Go-Grill-Rub (use only if you like spicy/hot flavors, otherwise leave it out because you have already seasoned potatoes with Go-Grill-A-Rub :)
- 1/4 tsp. freshly ground pepper
- Garnish with 1/3 cup dried cranberries
- and 1/2 cup pecans
Sweet potatoes rank high on the nutrition scale because they are loaded with vitamin A and C and have a low glycemic index to control blood sugar spikes. Sweet potatoes are a super-food.
This sweet/spicy/hot potato salad is the perfect side with a turkey sandwich. It’s a wonderful salad to keep in the refrigerator for a snack when energy drops in the afternoon.
The potatoes are rolled in olive oil and Engage Organics Go-Grill-A-Rub and roasted until soft and a little crispy..
Make this a side at Thanksgiving. It’s a beautiful addition to the season’s colors.
Peel potatoes and cut into 1 inch cubes.
In a large bowl, combine extra virgin olive oil and 1-2-Tbsp. Engage Organics Go-Grill-A-Rub, add the cubed potatoes and toss until well-coated. Arrange on 2 cookie sheets so potatoes aren’t crowed. Remember the more Go-Grill-A-Rub the hotter the salad will be. So taste and sniff as you apply the seasoning to the potatoes. (I cover cookie sheet with foil so the pan isn’t scorched). Bake at 400 degrees for about 35 minutes until potatoes are soft. ( You can stop here and served these roasted sweet potatoes as a quick, nutritious side dish. They are so tasty and addicting like sweet potato fries. So you have two recipes in one with these steps.)
Meanwhile combine 4 Tbsp. extra virgin olive oil, 2 tsp. balsamic vinegar, and 1 tsp. Engage Organics Original All-Purpose and Garlicsaltless. If you want a hotter salad use 1/2 tsp. Go-Grill-A-Rub in the dressing, too. However, remember the potatoes are already coated in the blend. So if your palate doesn’t tolerate heat, add just a pinch of Go-Grill-A- Rub and 1 tsp. Original All-Purpose and 1/2 tsp. Garlicsaltless and chopped green onions. Shake well and combine dressing with cooked potatoes, cranberries, and pecans. You will not need the entire dressing recipe. Taste and sniff to determine the correct amount. I reserve left over dressing to add the next day in case the salad gets dry. I always like to have more dressing on hand, so don’t use this entire amount the first day.
